Galettes are a rustic pie/ tart (pastry dough wrapped over a filling), that can be made sweet or savoury. They're a crowd pleaser for sure, and can be served as a meal, snack or tea- time hors d'oeuvres.
I made this super scrumptious, savoury galette, using Pillsbury crescent dough, making this dish even easier and quicker to make.

For The Dough

1 Tube of Pillsbury Crescent Dough- https://www.pillsbury.com/
For The Filling
Ingredients
1/4 Cup Vegan Cream Cheese- I used https://daiyafoods.com/
1/4 Cup Avocado, mashed
1 1/2 Tbl Pesto- (please note that Peche Patisserie's Pesto is no longer vegan) you can make your own pesto or sub for another vegan pesto)
Salt to taste
1 tsp Parsley Flakes
1/2 tsp Onion Powder
2 Small Tomatoes Sliced (for topping)
Method
Preheat oven to 375°F.
Add all of the filling ingredients to a mixing bowl and whisk together until well combined.
Lightly spray or brush a baking dish with oil.
Roll out your crescent dough on the baking dish, and spread with the filling (leaving enough room at the edges to fold over).
Top with slices of tomatoes and fresh basil (you can add some extra pesto on each tomato slice),then fold the edges of dough over the filling. You can lightly brush the dough with dairy-free milk.
Pop in the oven and bake for approximately 20 minutes until golden brown and the filling is cooked through.
