Cheesy Broccoli Bites- Vegan, Healthy, kid friendly & packed with protein

Broccoli and cheese were meant to be! Take a bite into these cheesy Broccoli bites made from a tasty mix of chickpeas, broccoli and cheese.

I'm always thinking of easy recipes I can make that my kids will love and I can pack in Arius lunchkit.

These delicious bites are packed with protein, nutritious ingredients, and are super easy-to-make. You can make a big batch and freeze them for later, then pop out for snacking on the weekends, sharing with friends and packing in lunch kits.

Ingredients

  • 1 1/2 cup Broccoli florets

  • 1/2 - 1 Cup frozen Peas and Carrots

  • 1 Can Chickpeas, drained and rinsed

  • 1 Tbl Nutritional yeast

  • 1/2 Cup Diced Vegan Cheese (I used vegan provolone)

  • 2 tsp Garlic powder

  • 1 1/2 tsp Paprika

  • 1 Tbl Parsley flakes

  • Salt to taste


Method

  1. Preheat oven to 360 °F.

  2. Add drained chickpeas to a mixing bowl and mash with a potato masher. Then add garlic powder, nutritional yeast, paprika and parsley flakes, and mix together until well combined. Set aside.

  3. Add broccoli florets with peas and carrots to a food processor and pulse until finely minced. Then transfer mixture and diced cheese to your mashed seasoned chickpeas.

  4. Fold together with the chickpeas until properly combined.

  5. Scoop mixture (using a small ice cream scoop) onto a lined baking tray. Brush the tops with coconut oil (I used garlic infused coconut oil) and pop in the oven. Bake for approximately 30 minutes until the bites are firm and light brown to the tops.

  6. Allow to cool slightly before serving.

  7. Serve these cheesy broccoli bites with your favourite dip or as a side dish. I served these yummy bites with sweet mustard dressing for a delicious snack.
