Happy Monday! Let's start this new day and week ahead with a healthy and wholesome breakfast. Here's a super easy recipe for my scrumptious chickpea scramble. It's loaded with protein and nutritious veggies, and sure to give you the energy boost you need to take on the day!

Yield 2 Servings
Ingredients
1 Can Chickpeas
2 tsp Garlic Infused Coconut Oil- I used @cgacaribbean
1 Small Onion medium diced
2 Tomatoes diced
1/2 C Mushrooms sliced
1/2 C Patchoi or Spinach chopped
1/2 tsp Turmeric
1 tsp Paprika
1/2 tsp Salt (adjust to taste)
2 Tbl Chive chopped
1 Tbl Tahini
Method
Add garlic Infused coconut oil to a heated pan on medium heat. Note: If using regular oil, instead add 1 tsp minced garlic when sauteing your onions.
Toss in onions, turmeric, paprika and salt. Stir and saute.
Now, add the tomatoes and stir. Then add the sliced mushrooms and patchoi. Stir and saute for a minute.
Add the chickpeas and stir to combine.
Now, add the fresh chive and tahini. Stir to combine and cook for another minute.
Remove from heat and serve.
Serving Tips: I served my chickpea scramble with Sourdough Muesli bread from @pechepatisserie, with a side of papaya, @chobani non-dairy yogurt and homemade granola
