Coconut chocolate chip cookies! Crunchy on the outside, soft on the inside, and the coconut flavour is absolutely divine!
Ingredients -1/3 cup virgin or cold pressed coconut oil -2/3 cup coconut sugar -1/4 cup unsweetened coconut milk (I used fresh homemade coconut milk) -1 teaspoon pure vanilla -1 1/4 cups all-purpose unbleached flour -1/2 teaspoon baking soda -1/2 teaspoon baking powder -1/4 teaspoon Himalayan pink salt (plus more for sprinkling on the cookies) -2/3 cup dairy-free semisweet chocolate Method
-Preheat your oven to 350 degrees Fahrenheit. -Add the coconut sugar and liquid ingredients to a bowl and whisk to combine.
-Then fold in the dry ingredients (except the chocolate chips) with spatula until well combined. Now, fold in the chocolate chips.
-Scoop onto a baking tray, flatten them, sprinkle with extra pink salt and bake for 12-14 minutes.
