Coconut Pineapple Upside-Down Oat Cake

Who said you can't have cake for breakfast?


Wake and bake this scrumptious Oat Cake for a delicious and healthy start to your day.

Enjoy the decadent smell of coconut sugar and pineapple caramelizing in the oven. Made with a mix of oats, banana, pineapple, raisins and pecans. Baked to perfection and topped with dollops of coconut yogurt. This Pineapple Upside Down Oat Cake is exactly what you need for and extra yummy breakfast that is sure to satisfy and fill you!


Ingredients

  • 2 Cups Oats

  • 1/2 - 3/4 Cup Mashed Bananas

  • 1 Cup Coconut Milk

  • 1 1/4 tsp Baking Powder

  • 1 tsp Cake Spice (or sub for cinnamon)

  • 1 tsp Coconut Essence

  • 1/4- 1/2 Cup Raisins

  • 1/4 - 1/2 Cup Pineapple chunks

  • Pinch salt


Toppings

  • Pineapple Rings

  • Crushed Pecans

  • Coconut Sugar

  • Unsweetened Coconut Yogurt


Method

  1. Preheat oven to 350ºF.

  2. Mix all of the ingredients together until well combined.

  3. Transfer to a baking dish and bake for 20-25 minutes until the top is golden brown. Or you can insert a toothpick and if it comes out clean, the cake is fully baked.

  4. Serve with dollops of coconut yogurt to make it extra yummy and nutritious!
