Crispy Veggie Rice Paper Dumplings- filled with mushrooms, kale, peas and carrots

Crispy on the outside and slightly chewy on the inside. These dumplings are bursting with flavour and packed with wholesome veggies.

They're super easy to make and so delicious, you won't want to stop eating them. See below for the recipe and step-by-step video.


Filling

Ingredients

  • 3 Cups Chopped mushrooms

  • 2 Cups peas and carrots

  • 1/2 Cup finely chopped Kale

  • 1 tsp Ginger powder

  • 1 tsp Minced Garlic

  • 1 1/2 tsp Soy Sauce

  • 1 tsp Sesame oil

  • Rice paper sheets

  • Seasme seeds

  • 1/4 Cup Coconut Oil and 2 tsp Sesame oil for frying


Method

  1. Heat a pan on medium high heat with Sesame oil, then add garlic and ginger, and saute for a few seconds.

  2. Toss in the chopped mushrooms and kale.

  3. Stir and cook for a minute then add soy sauce, peas and carrots, mix and allow to cook for another 2 to 3 minutes, or until the mushrooms and veggies are tender.

  4. Remove from heat and transfer to a food processor. Pulse until everything is finely minced.

  5. Prepare to assemble and wrap your dumplings. You will need a pan filled with water, a cutting board to wrap your dumplings on, the mushroom kale filling, a plate brushed with coconut oil and Sesame Seeds.

  6. Place 1 rice paper sheet into the water, making sure it's fully submerged into the water. When the paper is pliable you can remove from the water, drain off the excess water and place on the cutting board. Add 2-3 Tbl of Mushroom veggie filling in the center and fold the rice paper over the filling, roll and then fold the ends over to create a rectangle or square shape and place on your oiled plate. Brush each dumpling with coconut oil and sprinkle with Sesame Seeds. Repeat this process until all of the filling is used.

  7. Heat a wok or non stick pan with coconut oil and a drizzle of Sesame oil. When the oil is hot, gently place the dumplings in the pan (making sure not to over crowd the pan so you can easily flip them).

  8. Cook on either side for approximately 3 minutes until crispy. Transfer to a plate with brown paper or paper towels to absorb the excess oil.

  9. Serve as is or with this delicious sesame soy dipping sauce.


Sesame Soy Dipping sauce

Ingredients

  • 3-4 tbl Soy sauce

  • 2 tsp Rice Wine Vinegar

  • 2 tsp Sesame oil

  • 2 tsp Agave

  • 1 tsp minced Garlic

  • Fresh chopped Chadon beni, cilantro or chives


Method

  1. Mix all of the ingredients in a bowl and serve with crispy rice paper dumplings or you can use this delicious sauce for flavouring a variety of Asian dishes.
