Do you love nuggets? Try my Nutritious Nuggets recipe using cauliflower and dasheen.
Served with your favourite dipping sauce, it's a perfect snack for picky eaters. And best of all, they're easy to pack in your little one’s lunch kit or as an on the go meal.
Can't get your hands on dasheen? Not to worry, you can replace with sweet potato, regular potato or any other starchy vegetable.
Yield: Approximately 24 nuggets
Ingredients
For the nuggets:
1 large cauliflower
2 cups of cubed dasheen peeled and cleaned
2 tsp salt for boiling dasheen
1/2 cup frozen or canned corn
1/2 C medium diced red or white onions
Seasoning mix:
2 Tsp salt
2 Tsp garlic powder
1- 2 Tbl nutritional yeast
3 Tbl corn meal
Breading ingredients:
1 cups breadcrumbs
¼ Cup corn meal
1 Tbl parsley flakes
1 Tbl Paprika
1 Tsp onion powder
1 Tsp garlic powder
Salt to taste
Method
Clean and cut cauliflower and dasheen. (Note: Dasheen contains a milky substance that needs to be washed until water is clear).
Add water and 2 Tsp salt to a pot and bring to a boil.
Add dasheen and cook until tender.
Add the cauliflower and cook for 5 minutes to blanche.
Strain dasheen and cauliflower. Add to a food processor and pulse with the diced onion, corn, and seasoning mix until the texture is similar to rice grains. Transfer to a bowl.
Preheat oven to 350ºF
Scoop and toss in seasoned bread crumb mixture and place on baking dish.
Bake for approximately 20 minutes until golden brown. Spray with oil for extra crisp nuggets.
Serve with ketchup, sweet mustard or BBQ sauce.
Note: The nuggets can also be kept frozen for future snacking.
