These beautiful bites are quick to whip up, and perfect for a nutritious breakfast or dessert.
I used Granola and blended it with peanut butter and raisins to form these delicious, crunchy, sweet and salty crusts.
You can fill these with so many delicious things. I used peanut butter, coconut yogurt, and fruit, for a delicious and wholesome breakfast.

Granola Tarts
3 Cups Granola
2 Cup Raisins or Sultanas
1/3 Cup Unsweetened Peanut Butter
Filling
1 Tbl Unsweetned Peanut Butter
2 Tbl Vegan Coconut yogurt
Cocoa nibs
Add raisins and peanut butter to a food processor, and pulse together until the raisins are finely minced.
Add granola and continue to pulse until it's properly incorporated in the peanut butter and raisin mixture.
Using a cupcake or muffin pan, scoop approximately 1/4 - 1/3 Cup of your granola mix, and press the mixture along the bottom and sides of each muffin slot.
Place in the fridge or freezer for 20 minutes or more.
Remove from fridge, then use a butter knife to gently pop out each granola tart.
Fill each tart with a tablespoon of peanut butter, and the remainder with coconut yogurt, fruit and cocoa nibs. There's so much you can do with these cute, nutritious tarts.
You can fill them with caramelized apples or bananas, top with caramel, chocolate and more.
