Looking for an easy bake that's healthy and delicious? Then this Lemon-Coconut Loaf is for you!! Made with Cga Caribbean Lemon Infused Coconut Oil, and naturally sweetened with bananas and coconut sugar.
I covered this beautiful loaf with my chocolate date frosting for an extra decadent treat that's guilt free! This Lemon-Coconut Loaf smells and taste divine!
Ingredients
2 Cups Oat Flour
1 Cup Shredded Coconut (unsweetened)
1 Tbl Apple Cider Vinegar
1 Tbl Baking Powder
1 Cup Mashed Bananas
1 Cup Coconut Milk
1/3 Cup Lemon Infused Coconut Oil
1 1/2 Tbl Coconut Sugar
pinch of salt
Method
Preheat oven to 350ºF
Mix in a bowl- mashed bananas, coconut milk, coconut sugar, apple cider vinegar, and lemon infused coconut oil.
Stir in the Oat flour, Shredded coconut and a pinch of salt.
Grease a loaf pan with lemon infused coconut oil, pour batter, top with toasted coconut then bake for 20-25 minutes.
Allow to cool, slice and enjoy!
