Sweet & Spicy String Beans

Crisp string beans pan fried in Sesame oil, onions, garlic, hot peppers and agave. These sweet and spicy string beans can be served as a side or enjoyed as a snack!

Yield 2 Servings


Ingredients

  • 2 Handfuls of String beans (approximately 2-3 cups)

  • 1/2 of a Medium sized Onion, thinly sliced

  • 2 tsp Minced Garlic

  • 1-2 tsp Sesame oil

  • 2 Hot Peppers, thinly sliced (or sub with seasoning peppers for less heat)

  • 1 Tbl Sesame Seeds

  • Salt to taste

  • 2 tsp Agave


Method

  1. Trim the ends off of the green beans, then properly rinse them.

  2. Bring a pot of salted water to a rolling boil, then add the green beans and allow to cook for approximately 3 minutes. This method is called blanching.

  3. While the green beans are cooking, prepare an ice bath, which is a bowl filled with water and ice. This method is for quickly shocking the string beans after cooking, which stops the cooking process, maintaining the crispness and colour of the green beans.

  4. When the the string beans are finished cooking, quickly strain them and add them to the ice bath.

  5. Allow them to sit in the bath for approximately 4 to 5 minutes, then strain the green beans.

  6. Place a pan or wok on medium high heat.

  7. Coat the pan with Sesame oil. When the oil is heated, toss in the onions, garlic and peppers.

  8. Fry the onions and peppers for 1 -2 minutes until fragrant and softened.

  9. Add the green beans and toss with onions and peppers. Season with salt to taste.

  10. Sprinkle with Sesame Seeds, then add the agave and continue to stir and cook for another 3-5 minutes. Remove from heat.

  11. Serve as a side or enjoy as a snack!
