Vegan Egg Salad

For a high protein, wholesome and delicious lunch!

This recipe is super simple and quick to make- it only takes a few minutes and ingredients to put together. There's no cooking involved in this recipe.

Ingredients

  • 1 Block Extra Firm Silken Tofu

  • 1-2 Tbl Diced Red Onion

  • 1 Tbl Vegan Mayo

  • 2 tsp Mustard

  • 1/2 - 1 tsp Black Salt (for the "eggy" taste)

  • 2 tsp Chopped Parsley

  • 1/4 - 1/2 tsp Turmeric

  • Salt & black pepper to taste

Method

  1. Add the tofu, mayo, mustard & black salt to a bowl.

  2. Mash with a potato masher, then fold in the rest of the ingredients. Mix until well combined.

  3. Season with salt and pepper to taste.
